The participants will learn about the important revenue areas of the franchise business. The turnovers of the gastronomy, event management and banquet business fields will be taken into consideration. Balance sheet, P&L account and the important Financial Indicators, which assess the business situation of a company will be presented in a practical and visual value-added manner. Depreciation and the influence of investments on the liquidity and operational results will be handled in detail. In form of a profit centre, the turnover will be calculated and put in correlation to direct costs thereby performing the breakeven analysis of the catering business. Furthermore, the industry typical aspects like customer satisfaction, complaints, short-term cancellation and additional costs like breakage are integrated in the game. The impact of these aspects on the industry typical management ratios for example the average capacity in relation to seats per open days, capacity ratio and turnover will be hands-on discussed. Finally the different positioning strategies and their impact to the financial aspects will be represented. The diverse distribution channels and their respective target groups will round off the seminar.
